7 Common Types of Salt

Salt has been used for many years to ‘cure’ meat. When butchering and curing meat at home was a common practice,  salt used to cure the meat was sometimes produced with sugar-cure and condensed smoke – being advertised to give a ‘better, safer and more uniform cure …. sugar-curing and smoking – all at the same time.’

Today not that many people cure their own meat anymore.  However,  there are still a variety of salts on the market to choose from and to use in many different ways – not all of them food related!

Food Salts

1.  Kosher – used for cooking.  This salt dissolves quickly and its flavor disperses quickly being preferred by chefs since its coarse texture makes it easy to pinch. Measure for measure, one teaspoon of Kosher salt has less salt than the same amount of iodized or table salt. Kosher salt contains no additives or added iodine.

2.  Sea Salt – available in fine and coarse texture, sea salt is used to add a burst of flavor to ‘just cooked foods’. This salt tends to include trace minerals (iodine, magnesium and potassium) giving it a lighter, fresher flavor than traditional table salt.

3.  Table Salt (Iodized and Plain)goes through a refining process and is one of the most common types of salts used. Table salts are preferred in baking because the fine texture makes for easy, accurate measuring.

Bit of History: Iodized salt was first used in the 1920’s in response to hyperthyroidism caused by iodine deficiencies created by the processing procedure.


4.  Popcorn Salt – this very fine grind of salt is typically colored an orangish-yellow and is used on popcorn for both flavor and color. (Can also be used in vegetables, ie., mashed potatoes for flavor and color.)

5.  Seasoned Salt – salt that has had different herbs and/or spices added to it, i.e., onion, garlic.

Non-Food Salts

6.  Rock – this unrefined salt is sold in large crystals and typically used as a ‘bed’ for serving shell fish like clams and oysters, or combined with ice to make hand-cranked ice cream. (Also for melting road ice.)

7.  Pickling – used for brining sauerkraut and pickles. Since this salt is 100% sodium chloride, it is the purest form of salt.
